Tangerine, pomegranate seed, and honey salad

2009, like any other new year, is going to be a year when you may shed tears of joy or tears of sorrow. In the midst of it all, I trust you will find many reasons to celebrate. 

When you do, share this perfectly sweet, tangy, and crunchy winter salad with friends and family. Happy and wonderful New Year.

Servings: 4

Ingredients

  • 4 tangerines, peeled, sliced, and seeded ( or better yet, ask your farmer which varieties are seedless)
  • 1 pomegranate, seeded (cut it in quarters, turn it inside out underwater in a large bowl, then nudge the seeds out of their resting places. They will fall to the bottom of the bowl, and the white pithy stuff floats.)
  • 2 tablespoons honey

Directions

  1. Arrange the tangerine slices on salad plates. 
  2. Sprinkle them with pomegranate seeds. 
  3. Drizzle with honey.
