#Trending: Avocado toast

We'll admit it: This shouldn't count as a recipe. Avocado toast is as easy as can be and requires almost no effort. The best part is that it works just as well as a smart snack as it does a small meal. If you've never made avocado toast before, you're in for a treat. Here are some easy, basic topping ideas to get you started:

  1. A squeeze of lemon
  2. A few dashes of hot sauce
  3. Crushed red pepper flakes
  4. Thinly sliced radishes
  5. Cheese (goat, feta, gorgonzola are all great options)
  6. Olives
  7. An egg (hard-boiled, soft-boiled, poached all work well)*
  8. Pickled red onion

If you want to take your avocado toast to the next level, here are some fun combinations that require a just a little bit more effort:

  1. Mexican: Roasted corn, lime, cotija cheese, chili powder and cilantro (see recipe for Mexican corn salad)
  2. Caprese: Fresh mozzarella balls, cherry tomatoes and strips of fresh basil
  3. Moroccan: Harissa with preserved lemon
  4. Japanese: Furikake seasoning
  5. Garden fresh: Slices of heirloom tomatoes, basil and balsamic reduction
  6. Healthier than a bagel: Smoked salmon, red onion and capers
  7. Sweet and savory: Pistachios and a drizzle of honey

Prep time: 5 minutes

Ingredients

  • 1/2 ripe avocado
  • Bread of your choice, preferably something thick, crusty and whole grain
  • Salt and pepper to taste

Directions

  1. Toast the bread to your desired doneness. 
  2. Meanwhile, slice open avocado and carefully remove the pit.
  3. Scoop out the flesh of one half with a spoon and place it into a medium bowl.
  4. Season with salt and pepper to taste, then mash until chunky, like guacamole. 
  5. Scoop out and spread onto toast. If you prefer sliced avocado over mashed, slice the avocado while it's still in its half-shell, being careful not to pierce through the skin. 
  6. Then scoop the slices out with a spoon, place them on top of the toast, and gently fan it out. 
  7. Season with salt and pepper and add any toppings you'd like. Enjoy!
