When you ask a lot of people why they eat meat regularly, many say it is so they get protein. You can eat a lot less meat and still get plenty. Protein can come from plants too. Quinoa is an excellent source.
I have cooked quinoa more frequently in the past year or so but often have been disappointed with the texture. I had been using almost a 2:1 ratio of water or broth to quinoa and the results were sometimes gummy. As I didn't really like gummy quinoa, I reduced the liquid to 1 1/4 cup broth per cup of quinoa. Voila. Perfect, fluffy quinoa that didn't stick to the pan.
Quinoa comes in at least red and and yellow varieties. It is a really simple to cook tasty grain.
1 cup quinoa, rinsed and drained
1 1/4 cup vegetable broth or water
Bring the liquid almost to a boil in a medium saucepan. Stir in the quinoa. Bring to a very slow simmer and cover cooking for 30 minutes. Remove from heat and let sit covered for 5 minutes. Fluff with a fork and enjoy the magic.
