Grilled peach salsa

When peaches are ripe and abundant at the farmers market, there are many great peach recipes to try.

Next time you have a bounty of ripe peaches, try this wonderful grilled salsa recipe, adapted from EatingWell magazine.

Ingredients

  • 1 1/4 pounds ripe peaches, halved and pitted
  • 1 teaspoon canola oil
  • 2 tablespoons red onion, finely chopped
  • 1 small jalapeno, seeded and finely chopped
  • 1 lime, zested and juiced
  • 1/4 to 1/2 cup cilantro, chopped
  • 2 to 3 tablespoons fresh mint, chopped

Directions

  1. Preheat the grill to medium.
  2. Brush the cut sides of the peaches with the oil. 
  3. Grill the peaches over medium heat for 3 to 5 minutes or until they just begin to brown. You can grill with the lid down so the peaches cook through a bit. 
  4. Transfer the peaches to a cutting board and let cool.
  5. Chop the peaches into 1/4-inch pieces and toss with the other ingredients. Serve with chips as an appetizer, or pair with your favorite protein as part of a main course.
