Champagne vinaigrette

Baby gem lettuces ask for a classy vinaigrette — very lightly dressed. So easy and so good. Many versions of this dressing contain 2 to 3 times the amount of oil, but this one proves a little goes a long way.

Servings: 8 to 10 servings

Ingredients

  • 1 medium shallot, peeled and quartered
  • 1/4 cup champagne vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste

Directions

  1. Pulse in blender until smooth. 
  2. Use sparingly.
