Basil zucchini

This is the time of year when you may be planting those innocuous little zucchini plants that take up a very small space. In a few months, you may have a zucchini overload. 

It's good to practice with many different recipes to get ready. This recipe is in the category of light, easy, fast, tasty, and very healthy.

Ingredients

  • 1 teaspoon olive oil
  • 1 medium or 3 small zucchinis, thinly sliced
  • 3 tablespoons chopped fresh basil
  • 2 cloves garlic, minced
  • Salt and pepper

Directions

  1. Heat the oil in a medium non-stick skillet. 
  2. Stir fry the zucchini until it is just tender. 
  3. Add the basil and garlic near the end of the cooking time. 
  4. Salt and pepper to taste.
