Roasted Romanesco

What is that green, spikey and generally freaky looking vegetable you're seeing at the farmers market? It's Romanesco. This unusual veggie is also know as "Romanesque cauliflower" or "Romanesco broccoli." Don't be afraid of this stunning piece of produce — it's crunchy and delicious. Here's a favorite and easy way to prepare it.

Cook time: 25 minutes

Ingredients

  • One large head of Romanesco
  • 3 tablespoons olive oil
  • 1/4 cup freshly grated parmesan
  • Salt and pepper to taste

Directions

  1. Preheat oven to 425.
  2. Cut Romanesco into 2-inch pieces in the same way you would chop up a cauliflower. Place in a bowl and mix with a couple of tablespoons of olive oil, salt and pepper to taste.
  3. Spread the Romanesco florets on a baking sheet and roast for 15 minutes. Check to see that it's browning nicely.
  4. Sprinkle with some freshly grated parmesan and continue roasting for 5-10 minutes.
