Apple spice oatmeal cake

Enjoy this warm, comforting breakfast as the days become cooler. It can easily be made ahead and then heated up in the morning for a quick weekday breakfast.

I often double the recipe and freeze half of it and then pull it out for a week when I need something quick.

You can swap the apples for blueberries or pears for variety.

My kids like to celebrate and think we are having cake for breakfast!

Cook time: 25 minutes

Ingredients

  • 2 cups old-fashioned oats
  • 1/4 cup chopped walnuts, toasted
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon, plus extra to sprinkle on top
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons ground flax seed
  • 1/3 cup raisins

Wet ingredients

  • 1 1/2 cups almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened applesauce
  • 2 to 3 tablespoons brown sugar (or date puree)
  • 1 large apple, chopped
  • 1 egg

Directions

  1. Preheat oven to 375 degrees.
  2. Combine dry ingredients in a bowl. Combine wet ingredients in a second bowl.
  3. Mix together wet and dry ingredients and stir well.
  4. Spread mixture into 9-inch square pan. Sprinkle with cinnamon.
  5. Bake in oven for 25 minutes.
  6. Cut into squares and enjoy!
