My father got me hooked on this salad dressing recipe. He is a raw food guy and I was trying to improve my diet so I thought I would give it a try. The impressive thing was that I didn't tell any of the many picky eaters in my family what it was. My teenagers and my husband all loved it. They couldn't believe it when I told them it was completely raw and super healthy. Now, they dip carrot sticks into the cashew dressing instead of ranch dressing and I feel like Super-mom!
Prep Time: 10 minutes
1 cup unsweetened coconut water
3 cloves of garlic
1/3 cup lemon juice
1/4 teaspoon sea salt
1 cup raw cashews
Blend until smooth and creamy. Add more water if needed.
