Summer salad with strawberries, chicken, walnuts, and feta

Botanically speaking, the beloved strawberry isn’t a berry at all. But it’s a favorite fruit for good reason: It’s delicious and high in fiber, folate, potassium, and manganese, with ounce-for-ounce more vitamin C than an orange! Strawberries are also 92% water, which can help you stay hydrated this summer. Look for firm, bright-red strawberries. Wash just before eating — if stored wet, strawberries spoil faster. Leftover chicken is great for this recipe. Or — if you’re short on time — use cooked chicken breast from the deli. This salad comes together quickly and is perfect for hot summer days.

Ingredients

  • 1 large head romaine lettuce
  • 1 to 2 cups sliced strawberries
  • 8 to 12 ounces grilled chicken
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup raw walnuts, crushed
  • Balsamic vinaigrette (optional)

Directions

  1. Wash lettuce and strawberries.
  2. Chop the lettuce, and then hull and slice the strawberries. Toss together with sliced grilled chicken.
  3. Top with cheese and crushed nuts. With the combination of sweet strawberries and salty cheese, this salad is delicious without dressing. But if you would like, you can add a splash of balsamic vinaigrette.
