Prep Time: 10 minutes
Cook Time: 25 minutes
Preheat oven to 425.
Cut Romanesco into 2-inch pieces in the same way you would chop up a cauliflower. Place in a bowl and mix with a couple of tablespoons of olive oil, salt and pepper to taste.
Spread the Romanesco florets on a baking sheet and roast for 15 minutes. Check to see that it's browning nicely.
Sprinkle with some freshly grated parmesan and continue roasting for 5-10 minutes.
