Persimmon salsa
For our Mexican food-themed party on Halloween, I knew I wanted to make and bring something orange. As I looked around for inspiration at home, I spotted my persimmon tree. And creating a salsa using persimmons from my tree came to mind. Here’s the result!  Even beyond Halloween, this would be a great addition to any holiday party.

Servings: 8

Ingredients

  • 2 to 4 tablespoons of onion, chopped small
  • 1/2 jalapeño, chopped small
  • 1/4 bunch cilantro, chopped
  • 1 lemon, juiced
  • 1 tomato, chopped small
  • 4 to 5 medium Fuyu persimmons, chopped small
  • 1 to 2 teaspoons salt

Directions

  1. Mix all of the ingredients together in a bowl
  2. Enjoy with corn tortilla chips.
