Lemon-Lime vinaigrette

I recently added a new vinaigrette to my list after lunching at a Mexican restaurant in West Berkeley called Tacubaya.  It's great to be able to search online for the recipe on the way home and then to modify it a bit to suit my taste. It is so basic and can be used on all kinds of things, including salads, grains and fish. Serving size approximately one Tablespoon per person.

Servings: 10

Ingredients

  • Juice of one lemon
  • Juice of one lime
  • 1 Tablespoon sugar
  • 1/2 teaspoon salt
  • 1 1/2 times as much extra virgin olive oil as juice (for starters)

Directions

Whisk or shake everything together. Taste. Add more of whatever you happen to like.
