Farmers market peach salsa
This recipe comes from Freshest Cargo, a mobile farmers market that brings affordable local produce to underserved communities. This initiative grew out of Kaiser Permanente’s long-term partnership with the Pacific Coast Farmers Market Association, the organization which brings farmers markets to many of Kaiser Permanente's Northern California hospitals. Building on the idea of bringing markets to the places where people gather, a coalition of community and faith-based partners worked with Freshest Cargo over the past year to bring the mobile market to churches in East Oakland on Sundays. Before and after services, parishioners can find these ingredients for a great salsa produced by local family farmers. Plus: It’s so easy to make and incredibly delicious.

Ingredients

  • 1/2 red onion, small dice
  • Juice of 2 or 3 limes
  • 6 freestone peaches, large dice
  • 1 pint cherry tomatoes, halved, or heirloom tomatoes, chunked
  • 1 to 3 jalapeños, minced
  • 1/2 bunch cilantro, chopped
  • Salt to taste

Directions

  1. In a small bowl, let the red onion soak in the lime juice while you prep the remaining ingredients.
  2. Toss everything together and season with salt to taste.
  3. Consider adding the jalapeño a bit at a time to your family's preference.
