This is the time of year when you may be planting those innocuous little zucchini plants that take up a very small space. In a few months, you may have a zucchini overload. It's good to practice with many different recipes to get ready.
This recipe is in the category of light, easy, fast, tasty and very healthy.
- 1 tsp olive oil
- 1 medium or three small zucchinis, thinly sliced
- 3 Tbsps chopped fresh basil
- 2 cloves garlic, minced
- Salt and pepper
Heat the oil in a medium non-stick skillet. Stir fry the zucchini until it is just tender. Add the basil and garlic near the end of the cooking time. Salt and pepper to taste.
