If quinoa isn’t already a staple in your household, stock up! Not only is quinoa incredibly good for you, it’s also extremely versatile.
This bowl uses quinoa as a base for some incredible Asian flavors. The ponzu sauce, sesame oil and nori (or seaweed) bring a comforting, wonderful earthiness, and a creamy ripe avocado helps bring it all together. (Want to add a kick? Add a few drops of Sriracha sauce to taste – highly recommended!) And because quinoa and avocado are both superfoods, this bowl should keep you feeling nourished for a good amount of time.
Some things to note:
- If you’re not familiar with ponzu sauce, think of it as a lighter, citrusy version of soy sauce. But like soy sauce, ponzu can be high in sodium, so use sparingly.
- Nori typically comes in packets containing several sheets. Using kitchen shears, cut one sheet into small strips.
- Ponzu, sesame oil and nori can be found in the Asian foods aisle of any grocery store, or at any Asian market.
