All-Purpose lemon vinaigrette

The lemon vinaigrettes I have shared in the past were really basic --- just lemon, olive oil, and garlic plus seasoning.  This version adds a few other ingredients and is great on salads with or without protein on top, whole grains or other vegetables. For now, just have dinner.

Servings: 2

Ingredients

  • 2 Tbsp lemon juice
  • 2 Tbsp extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tsp coarsely chopped rinsed capers
  • 1 tsp minced fresh oregano
  • 1 tsp Kalamata olives, pitted and minced
  • Salt and pepper to taste

Directions

Whisk everything together.  Use as above on almost anything.
