The lemon vinaigrettes I have shared in the past were really basic --- just lemon, olive oil, and garlic plus seasoning. This version adds a few other ingredients and is great on salads with or without protein on top, whole grains or other vegetables.
For now, just have dinner.
2 Tbsp lemon juice
2 Tbsp extra virgin olive oil
1 garlic clove, minced
1 tsp coarsely chopped rinsed capers
1 tsp minced fresh oregano
1 tsp Kalamata olives, pitted and minced
Salt and pepper to taste
Whisk everything together. Use as above on almost anything.
