All-purpose lemon vinaigrette

All-purpose lemon vinaigrette

The lemon vinaigrettes I have shared in the past were really basic — just lemon, olive oil, and garlic, plus seasoning. This version adds a few other ingredients and is great on salads with or without protein on top, whole grains or other vegetables. 

Servings: 2

Ingredients

  • 2 tablespoons lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 garlic clove, minced
  • 1 teaspoon coarsely chopped rinsed capers
  • 1 teaspoon minced fresh oregano
  • 1 teaspoon Kalamata olives, pitted and minced
  • Salt and pepper, to taste

Directions

  1. Whisk everything together.
  2. Use as above on almost anything.
